You can use store bought Bruschetta mixture or make your own, I make my own. I make a bit of a different version than my usual Bruschetta for this recipe.
Bruschetta mixture: all ingredients are to taste.
Diced fresh tomatoes, the green ends of scallions (sliced), fresh basil (diced up), Olive oil, salt, pepper, garlic powder or fresh pressed garlic. Toss all ingredients together and let sit for a little while (mine sat about 30 minutes).
Grill chicken breasts, once cooked top with a slice of provalone cheese and melt the cheese.
Put chicken breasts on Kaiser roll, top with bruschetta mixture and then drizzle with balsamic glaze.
A nice quick, easy way to dress up grilled chicken breasts.
We had something very similar to this at the Sci-Fi Dine In Theater at Walt Disney World a couple of years ago and we liked it so much that when we got home we played around with ingredients until we came up with this…a pretty good copy of what we had there. This is GREAT in the summer when you don’t want to heat up the kitchen…serve with cold sides and grill chicken outside.
