Janet’s Meatloaf

This is my mother’s meatloaf recipe

Meatloaf:

about 1 lb ground beef

two slices of bread torn up and chopped up fine

1 egg

2-4 gloves garlic, pressed

1/4 of a green pepper, chopped

1 small onion, chopped

Ketchup (enough to make everything wet enough to mix)

 

Topping:

Canned tomato soup

a few slices of raw bacon

 

Combine all meatloaf ingredients until well mixed.  Form into a loaf in a baking pan or dish for freezing. When ready to bake put meatloaf in baking dish and then take a can of tomato soup and open.  Use the concentrated soup as a paste to coat the entire meatloaf.  Open a second can of tomato soup and combine with whatever was left of the other can.  Add just enough water to make it pourable and pour around the meatloaf.  This will become your gravy.  Lay 2-4 slices of raw bacon across the top of the meatloaf.  Bake at 350 for 45 minutes to 1 hour depending on your oven.

 

Comments:  We have made these and frozen them uncooked.  They come out great.  Today we made a batch and a half and made three small meatloaves to freeze for later use.  We did not top with soup or bacon, we will do that just before cooking.  Once we bake on of these off I will post a picture of the finished product.
