Janet’s Leftover Corned Beef Skillet Dinner

cut up all leftovers from corned beef and cabbage meal….amounts will vary each time you make this.  There are no right or wrong proportions.

potatoes

cabbage

corned beef

cooked bacon, chopped or crumbled (tonight I used a 12 oz package because I didn’t have a huge amount of leftovers)

Heat in a skillet, add a little butter for flavor and to assist in the browning.  Cook until it browns to the degree you prefer. Serve with a salad and some rolls.

My mother always made this from leftover corned beef, so it is her recipe really.  When I make a corned beef dinner now, I get three meals out of it.  The original boiled dinner, Reuben sandwiches, and this skillet meal.

  1. I’ll have to tell you the story of the time my mom had corned beef leftover in the fridge, but this is definitely not the place!
