cut up all leftovers from corned beef and cabbage meal….amounts will vary each time you make this. There are no right or wrong proportions.
cooked bacon, chopped or crumbled (tonight I used a 12 oz package because I didn’t have a huge amount of leftovers)
Heat in a skillet, add a little butter for flavor and to assist in the browning. Cook until it browns to the degree you prefer. Serve with a salad and some rolls.
My mother always made this from leftover corned beef, so it is her recipe really. When I make a corned beef dinner now, I get three meals out of it. The original boiled dinner, Reuben sandwiches, and this skillet meal.
