Blueberry Cornbread

This is so easy!  We often make this when we know someone is coming over for coffee, or as a nice weekend breakfast treat. It is also fantastic cooked in cast iron over an open fire!!  Yummy!

You can use any prepared cornbread mix.  I will write the recipe up for what I use.

2 boxes Jiffy brand cornbread mix

2 eggs

2/3 cup milk

blueberries (about 1 pt)

1. Follow the directions on the box of cornbread mix and prepare the mix.  (For Jiffy it is 2 eggs and 2/3 cup milk added to the two small boxes of mix).

2.  Wash and dry blueberries.  I add about a pint of blueberries to my mix, but you can add as much as you prefer.  Gently fold blueberries into cornbread mix.

3. Pour batter into prepared baking pan (we use stoneware).

4. Bake on 400 for about 25-30 minutes until golden brown and toothpick inserted comes out clean.
