Strawberry Vinaigrette (Liberty Tree Tavern-Magic Kingdom, Walt Disney World)


8 TB strawberry vinegar
1 tsp. salt
1 TB granulated sugar
1 oz. frozen strawberries
2 TB Dijon mustard
dash Tabasco sauce
dash white pepper
3 cups salad oil
4 TB water


Place strawberry vinegar, salt, sugar, strawberries, mustard, Tabascop, and white pepper in storage container. Using hand-held blender, blend ingredients well. Add oil in four parts, blending thoroughly after each addition. Add water and blend one last time.


Notes:  When we made this we cut the recipe in half.  I did taste the dressing and then add a little extra sugar and a little extra strawberry puree (which I made out of thawed frozen strawberries).  I used a freshly made vinegar from a gourmet store in Mystic, CT.  It was a strawberry champagne vinegar and it was really strong (but fantastic!) so that may be why I needed to adjust the sugar and strawberry balance.  We just put it over a basic salad of field greens, grape tomatoes, shredded carrots, and cucumbers.  I added croutons to mine.
