Maureen’s Baked Potato Salad

I had a bunch of things left over from dinner last night so I decided to try making a potato salad that tastes like baked potatoes.  It came out great!

Amounts are not strict at all and can vary according to what I have on hand.

 

Previously baked potatoes, chilled then peeled and cubed

sour cream

mayonnaise

fresh chives, chopped

leftover cold cooked  bacon, diced

shredded cheddar cheese

 

1. Cube the cold potatoes

2.  Add diced bacon, chives and shredded cheddar cheese to taste (I used the pre-packaged finely shredded variety).

3. Add mayonnaise and sour cream, then mix thoroughly.  I mixed in 2 parts mayo to one part sour cream and that balance was perfect for us.

4.  Chill until time to serve.
