Grandma Feerick’s Stuffing

Stuffing:

3/4 lb sausage (I use the Jones sausage rolls)

1 loaf bread (soaked with just enough water to make soft)

2-3 stalks celery, diced

1-2 onions, diced

crushed thyme (start with 1/2 tsp and add from there if you think it needs it, I never add extra)

1 or 2 eggs depending on the size

 

  1. Fry sausage with thyme, remove from pan
  2. Add onions and celery into pan with a little butter and saute until slightly tender
  3. Tear up bread and add just enough water to make soft
  4. Add cooked sausage, onions and celery to bread
  5. Mix together
  6. Add eggs and mix until combined
  7. Take some of the stuffing mixture and return to frying pan, fry until it firms up.  Do this in stages until you have fried all of the stuffing
  8. Either stuff the turkey or put the stuffing in a buttered casserole dish and bake at about 350 for about 45 minutes or until it is heated through and the top is nice and crunchy.
