I was looking for something different to have on a picnic other than potato salad etc. I love Caprese salads so I thought about how I could make it more portable. This was the result and it was fantastic! The weather didn’t cooperate though and we wound up having our picnic dinner in the kitchen!
Grape tomatoes or any other tomato small enough to keep whole
Fresh basil leaves
1. Gather all ingredients
2. Tear basil leaves off of the stems
3. Start threading ingredients onto skewers. I like to start and end with tomatoes since they kind of hold everything on. I did tomato, mozzarella ball, basil leaf and repeated that.
4. Serve with balsamic reduction/glaze for those who want to drizzle that on right before eating.
