I used to make these on the stove top and they made quite a mess with the boiling salty water flying everywhere. I found this recipe online somewhere and decided to try it. We will be making them this way from now on! These potatoes come out very creamy inside.
- 3 lbs New White Potatoes (small potatoes work best)
- 1 cup sea salt or I have even used regular table salt
- 6 cups lukewarm fresh water
- 1/2 cup melted butter
Wash potatoes. Add Salt and Water to Pressure Cooker cooking pot and Whisk until the Salt has completely dissolved.
Lock on Lid and close pressure valve. Cook at High Pressure for 2 minutes. Wait 15 minutes and then release pressure.
