Maureen’s Fig and Arugula Flatbread

I got the idea for this from some cooking shows and from a salad I had recently. I thought the combination would be good as a side dish.  Hubby says this is a winner and so do I.  Amounts for ingredients are very loose and pretty much according to your taste.

Ingredients:

1 can of Pillsbury pizza crust

Arugula

Dried figs, cut into pieces

Fresh Parmesan cheese

Prosciutto, torn into pieces

Balsamic reduction/glaze  (available in most grocery stores)

Method:

1. Bake pizza crust according to the directions on the can.

2. After baking is complete, add arugula, prosciutto, chopped figs, and big shavings of Parmesan cheese (I use a vegetable peeler to shave it) to the top of the pizza crust.

3. Drizzle with balsamic reduction and serve.
